GF DF Spaetzle

GF DF Spaetzle

Spaetzle recipe
2 c Rice Flour
1/4 c Sorghum (sweet rice)flour
1 1/2 t Xanthan Gum
1 t salt
5 eggs
3/4 c water

Start a large pot of heavily salted water to boil.
Mix dry ingredients
Beat eggs with water until just mixed.
Add wet ingredients to dry and mix with a rubber spatula until mixed thoroughly.

Place a colander over pot of boiling water and press spaetzle mix through the holes in the colander with a rubber spatula.
Make the spaetzle in 4 batches removing the colander from the pot after each one because the colander will heat up and start cooking the spaetzle dough.

After each batch scoop out the spaetzle with a skimmer or slotted spoon and place in a separate bowl.

When all batches are done, you have just made spaetzle, dumplings, home-made noodles.
These can be tossed with clarified butter, oil or added to your favorite soup.
